Owned and managed by Sophie Delany, One Wicker Cheese Co. is a cut-to-order cheese shop specializing in artisan and farmstead cheeses from the NC region and beyond. Born and raised in the Chapel Hill area of NC and with parents in the hotel business, Sophie spent many of her formative years working in various facets of the industry. In 2014, after graduating from UNC and realizing that elementary school teaching was not her true calling, she packed up and moved to Highlands, NC in pursuit of a career in hospitality. She started at Old Edwards Inn working in the Banquet department and eventually made her way into management where she spent almost a decade learning, growing and experiencing the mostly magical world of F&B.

 

She fell into it all somewhat accidentally and has loved it ever since, but after having her second tiny human in April of 2020 there grew a shift in priorities. Feeling like she was in a place where she had to choose between the job and her family, she took a slight left turn and went into catering/event sales, giving her more flexibility and not so many late nights, but there was always that tiny little voice that kept urging her to find a way back to F&B.

Sophie has always been a cheese lover - she remembers as a small child, sneaking into the kitchen before her parents were awake to cut chunks of cheddar off the block for early breakfast. In the fall of 2022 she started a deep dive into the cheese-verse and attended a 3 day Cheese Boot Camp at Murray's in NYC. It was there that she learned how many other people are also in love with and interested in cheese!

 

It really truly started as a dream, a way to do something she was passionate about, to have more flexibility for her family, and to bring something to Highlands that was unique and fun, that would cultivate community and create spaces for connections. Cheese has so much to offer, from its almost very miraculous makeup to its huge array of accompaniments, to the educational and social aspect, and the support that our shop can provide for smaller producers, farmers, and makers. Sophie is committed to quality and care and aims to leave a lasting impact on every customer, one that extends beyond any cheese's expiration date.
